Greek Salad

This isn't your typical Greek Salad. There is no olives, feta cheese, and vinegar. And the olive oil is optional. This is just a simple tomato, cucumber, and onion salad. It's delicious! I promise! You can serve it with anything, even fried chicken and meatloaf.

It's a simple and easy recipe. It won't take you much time at all to make.


1 large cucumber, peeled and cubed
1 large tomato, cubed
1/2 cup chopped red onions
1 lemon, juiced (you can also do lime)
1/4 cup parsley (minced)(optional)
2 tsp extra virgin olive oil (optional)


Mix all ingredients together in a large bowl and serve.

Serve with Pizza Potato or any other meat dish for a delicious refreshing meal. In the summer time when we make this recipe we add pomegranates.
