Beef Shish Kabobs
Ok! There are different variations of the beef shish kabobs and in different parts of the Mediterranean they are called something different. For example Persians call it kefta kabobs. No matter what the name the ingredients are pretty much the same. You choose how you want to shape the shish kabobs. You can flatten them, make them round, cylindrical or you can mold them onto flat skewers or wooden skewers. It’s all a matter of preference.
Depending on how I cook my beef shish kabobs, I shape them differently. For example if I am grilling kabobs, I will shape them onto skewers. I use either a flat skewer or the wooden skewers. It's your choice. You don't even have to put beef kabobs on skewers. You can just shape them to the desired size and throw them either in the oven or on the grill.
Now let me tell you the secret to the great distinct flavor, it really isn’t what you put in them it’s how you grill them. To get the most flavor out of them, you have to cook it over an open flame, such on the BBQ grill. But if you do not have a BBQ grill, do not despair, you can still have great tasting kabobs, if you broil them in the oven. You can also use an iron skillet to brown them.
They are so easy to make and taste great.
2 pounds ground sirloin beef (You have to get ground meat that has some fat in it, or your k-bobs will be dry. Some variations call for 1/3 lb of ground lamb, but that tends to dry it out as well, but it’s up to you. I don’t use lamb in mine, although I love lamb in stews.)
½ cup finely chopped parsley
½ cup finely chopped onions
2 tsp season salt
2 tsp black pepper
1 Tbs flour
Preparing the k-bobs:
- Mix everything together with your hands.
- Set aside for 20-30 minutes for the seasonings to penetrate into the meat.
- Heat your BBQ grill.
- In the meantime prepare your cucumber salad, Greek salad (cucumber tomato salad), vegetable tray and your sumac onion side dish.
- Place the side dishes and vegetable tray in the fridge to chill.
- Mold a fist full of meat mixture onto BBQ skewers to the desired thickness.
- Place them on the hot grill until they are brown on both sides.
- Remove from grill and serve with pita bread or flat bread and side items.
To save on time, prepare all of your side dishes for your beef kabobs a day ahead ...

You can even cut up all of your vegetables ahead of time. When you're ready to wrap your beef kabobs, select the veges you like and you have a healthy lean nutrient rich meal.
However, DO NOT, I repeat, DO NOT prepare your meat mixture ahead of time, such as the day before. This will ruin your beef shish kabobs. You can prepare it 30 minutes before grilling time, but no more than that. I’m telling you the blood from the meat will seep out and destroy your creation. Just a helpful tip!
